Grapes for this wine Sourced from the Wait family ‘Talara’ vineyard, in the Blewitt Springs sub-region of McLaren Vale; this vineyard sits on deep sandy loam over shale soils, dirt that is hugely influential on wine style. Endless structure, and fine-grained tannin are famed in this part of the world.
Crushed fruit was put to fermenter over the top of 20% hand harvested whole bunches. Fermented on skins over 10 days, the whole bunches in the bottom of the fermenter were then foot stomped, before pressing to 25% new French oak and 75% seasoned French barriques. The inclusion of whole bunches lends beguiling carbonic maceration flavours of fresh red fruits and lush confectionery, tempered by the subtle herbal freshness of the green stalks.
This is an exceptional and complex wine and has a great presence. The complexities show characters of whole bunches and stalks. The wine has intense bouquet, perfectly balanced palate and long lasting finish. The palate has lovely cherry and ripe plum fruit characters and lovely smooth milk chocolate finish.
