Product Description
Produced from old vines, this is a traditional style of Chablis, with a lean, steely minerality. Chablis uses exclusively the Chardonnay grape variety, the vines grow on limestone soil rich in fossils.
The fruit is whole-bunch pressed, transferred to stainless steel tanks for a cool fermentation with indigenous yeast. Malolactic conversion is completed with indigenous bacteria and the wine is matured on fine lees in tank for 4 months prior to bottling.
